Don't be fooled by this mis-named product!

Pros: a totally unique product, never duplicated, single ingredient - must
Cons: no cons
"This is NOT Balsamic Vinegar, it IS Aceto Balsamico Tradizionale di Modena.
It has nothing to do with the product that your supermarket sells in aisle 8 for $7.99.
This is an artisanal product that is made with only Trebbiano and Lambrusco grapes grown in Modena Italy. On the same day as they were picked, they are cooked down into a 50% reduction called MUST (or Saba).
In the attics of farmhouses in Modena, that Saba is then aged in ever smaller barrels of different woods over "a minimum" of 50 years, where is evaporation and the woods of the barrels impart their characteristics on the product.
Then a sample is taken to a consortium for evaluation. Then and only when the consortium score the product at a high enough level can they:
-Put it in the unique shaped bottle
-Call it Aceto Balsamico Tradizionale di Modena.

Unexpectedly Good!

"Do not let the price fool you. This has all the flavor that you are searching for in a balsamic vinegar. I have had much more expensive vinegars but seldom a better vinegar. Give it a try in your next recipe."
