" This unit works great. After a couple weeks we bought 2nd unit sent to our son. We love the taste. And yesterday cooked London broil for 24 hours. It was very tender.
The only negative is the rack that ships with the unit. It's pretty close to useless. I got the other one from Sous Vide (2 of them). While it's much better, I did a bit of a mod on it this morning to keep the bags from sliding out. If you buy this, order the rack that comes standard on the regular size unit from sous vide directly. These are the folks that make this unit. "

Expensive Crock pot

" I purchased this device mainly to cook proteins, mostly fish and meats. I was greatly influenced by all of the very positive reviews on other sites, the ones that promised increased tenderness and greatly improved taste.
Unfortunately, only half of that promise was fullfilled. Meats were tender and evenly cooked, as promised, but the Sous Vide is sorely lacking in the taste catagorey. I totally wrecked an expensive Copper River salmon steak. It tasted not as good as a pan fried farmed Atlantic salmon, both purchased at Costco.
The next experiment was a chuck roast, also purchased from Costco. What a disappointment that was. Yes, it was, again, evenly cooked , and tender, but the texture of the meat was slightly hot dog like and the flavor, while OK, was anything but outstanding. One thing I noticed is that MUCH more of the fat that is integrated into the muscle is retained is this method of cooking and the meat leaves a greasey mouth feel and taste. The feeling in the stomach is one that you would experience after swallowing a 1/4 lb. of butter! That was partially rectified by reheating leftover meat in the microwave, which left voluminous amounts of grease fat on the microwave plate. The flavor still wasn't as good as it would have been in a crock pot or slow cook at higher temperature in an oven.
I'm sorry, but this form of cooking just isn't for me. "
