D'Artagnan 18-month Aged Boneless Spanish Serrano Ham

Bring your favorite Tapas to your Home! There is nothing more Spanish than Jamón Serrano. Serrano Ham is a traditional Spanish dry-cured ham. "Serrano" means "mountain", and like the prosciutto of Italy and Jambon Bayonne of France, is traditionally processed by hanging in the cool, arid mountain breezes. Serrano Ham is known for being less salty than Prosciutto, with a deeper flavor that comes from both its shorter time in salt and its longer dry-curing time.      Handcrafted in Spain by fourth-generation master charcutiers   Aged a minimum of 18-months   Only 100% sea salt cured and 100% nitrate free Serrano hams available in the USA   Serrano ham is very versatile and requires no preparation except to slice thin and enjoy   Traditional heritage breed pigs, a cross of Duroc and Landrace breeds   10 lb minimum weight   D’Artagnan’s premium 18-month Serrano ham starts with traditional heritage breed pigs, a cross of Duroc and Landrace breeds. The ham is then handcrafted in The Rasillo de Carmeros Mountains of Spain, by fourth-generation master charcutiers. Our Serrano ham is produced by strictly adhering to the age old methods of producing Jamon Serrano, developed by the family’s ancestors, but now adding the latest high-tech quality controls. D’Artagnan’s premium Serrano hams are aged in the fresh air of the Spanish Mountains for a minimum of 18-months to achieve its delicious and rich taste. The minimum of 18-month aged Serrano will have a richer and more developed flavor characteristic than an 8-12 month Serrano, which is more commonly available. It is very important to note that D’Artagnan’s Serrano ham is the only 100% sea salt cured and 100% nitrate free Serrano hams available in the USA today. The end result of this natural curing method is superior quality with a clean and natural flavor profile. Serrano ham is very versatile and requires no preparation except to slice thin and enjoy. Tapas, Grilled Serrano & manchego cheese sandwich, Serrano wrapped prawns, salads, pizza, pasta, the options are limitless! This 10 lb Serrano ham has the rind already trimmed off and is boneless, which allows for easy preparation. Model: PDRSH002

Great Spanish ham for the price

Pros: good price and good flavor, fast shipping [ordered sat. arrived wed.]
Cons: slicing the ham properly takes time [but worth it]
"We served this ham for my father's birthday last weekend. Several of the party guests had either lived in Spain or traveled there frequently, and were well-acquainted with this style of ham. Other party guests had never been to Spain or tried this style of ham. However, everyone who tased the ham, liked it.
My father has a very sharp bread slicing knife that allowed me to slice it very thin, which is how it is supposed to be sliced. We served it at room temperature, and considering the price, I think the flavor was very good.
Yes it has a fairly thick layer of fat on one side, but that's normal and expected. If people spend time worrying about the fat being too much of the ham's weight, I think they are obsessing when they should be enjoying.
As far as comments I have read about about mold, spots, etc., I found the following on another page about Serrano ham, and think it is pretty accurate:
------------------------------------------------------------------
Mold:
A thin layer of mold may appear on whole hams. This penicillin-like mold is completely harmless. It can be removed with a clean, damp cloth or with a cloth and olive oil.
Small white spots:
These are small "chalky" granules that form between the muscle fibers during the curing process. They vary in shape, size and location. They are amino acids found in aged meat and cheese products and are perfectly safe to eat.
Iridescent coloring:
This coloring can be seen on the cut surface of the ham and in certain parts of the meat. It is insignificant as far as the quality of the ham is concerned.
Salt:
Sometimes salt can crystalize on the surface of the ham in dry conditions. This inorganic salt does not affect the flavor of jamón and can be brushed or wiped away.
White film:
This may be seen on the cut surface of whole or boneless hams. Simply slice off the section with the film and discard the discolored slice.
Fat:
Whole hams tend to be rather fatty, which protects the meat and helps it keep longer.

Good flavor but too dense

"The flavor on this Ham was very good but it was very dense, very difficult to cut (I have global knifes). Also after less than a month into the fridge it got all moldy, that is very weird since when I home cure some pork loins, they never get moldi even after 6 months!!!! I probably got a bad one, it will be nice if costco could send me another one to make me believe again...."

I wanted to like this ham...

Pros: good price
Cons: may not meet your expectations
"I'm quite familiar with various types of Spanish ham and this is undoubtedly a good price per pound. I ordered one of these last year and split it with a friend who also is familiar with these hams. Unfortunately, the ham we got was a disappointment. I have very good knives that I sharpen to a razor edge by hand, but it was a great effort to slice off even the thinnest pieces. The ham was incredibly dense, tough, and dry, having the consistency of meat that has been freezer-burned, and the taste was disappointingly different from any Spanish ham I've had. Based on the many other positive reviews of this product, maybe I just got a bad one. I should have returned it, but I kept expecting it to get better as I continued to shred away at it."

Excellent Serrano Ham

Pros: it freezes great - cut off a hunk and wrap well.
Model Number: PDRSH002
"The quality of this Spanish ham is excellent...really flavorful! I ordered it for Christmas gift giving and to serve at home too...even when I didn't get the slices thin enough, it wasn't tough...soo tasty! I love the quality of D'Artagnan products. I'm so glad Costco carries nice assortment packages too!!"

Good ham and good price

"We loved the ham, it had been cured in Spain and the taste was excellent, and improved with time. We enjoyed it because we finally could have the flavor of Spain close to home.
It needs to be cut very thin.

Not what I expected

"I was very disappointing with this Serrano jam. It was tough and it had no flavor. It's all moldy and it has been in the refrigerator all along. Having a Spanish father, I have had this ham all my life and this was not the flavor I expected."

Not as advertised: 12 months

Pros: loved this product last year
"It is advertised as a 18-months Serrano ham. The shipping slip from Costco indicates it is 18 months, but the piece we got is labeled as 12 months on the plastic it is wrapped on."

Great Jamon Serrano

"For the money this is great Jamon Serrano. It is not Jamon Iberico as some would seem to like, and it is also not an Iberico pice. It is Serrano and with a glass of Vino Tinto it is hard to beat. Be sure that when you begin to slice the ham, do it as thin as possible. The thinner the slice the better the taste and cut across the leg. The first one I bought I cut it as you would a ham with a bone, along the bone. This is wrong and it will be very tough and almost impossible to eat. Cut it like you would a loaf of bread, start at the thick end and cut across the leg, but remember cut as thin as you can. When I cut the fat off I keep the fat and place it over the cut portion so it won't dry out and then wrap the leg in a soft cotton cloth and put it in the refrigerator. That way it will literally keep for months. Mmmmm this is making me hungry. Maybe one more slice to finish with my glass of Tempranillo."

Very good Serrano Ham

"It's about time we can buy Serrano Ham in the US. This ham is good and the price is excellent; I buy it every time Costco has it on sale. I'm on my fourth now and I will keep on buying it while Costco sells it."

Great Value

Pros: tasty
Cons: must own a very sharp flexible knife
"We served this ham for Easter, and it was a hit with everyone. We thin sliced it, served it with Manchego cheese (from Costco too) and crusty bread. It was the star of our Easter brunch. You do need a very sharp flexible knife to get razor thin slices. Thick slices are tough."

excellent taste and fun to eat

"The ham is a special treat and once it is sliced we treat it like candy, great taste but eat in moderation and make it last.
In future you may want to add a cutting stand to go with the ham.

Spanish Ham disappointment

"Having had Spanish Hams while in Spain we expected a culinary treat with our purchase from Costco. To our surprise, the ham was touugh and very difficult to slice and it lacked the flavor expected. We were very disappointed with the product, especially with the price paid for the item. This was a suprise, Costco usually has great products--"

WORST FOOD PRODUCT EVER PURCHASED AT COSTCO

Pros: none
Cons: see above.
"TASTELESS, IMPOSSIBLE TO CARVE, BROKE A KNIFE IN THE ATTEMPT. SERVED WHAT I WAS ABLE TO CARVE TO GUESTS WHO POLITELY SPIT IT OUT. RETURNED IT TO COSTCO WHO REFUNDED MY $ PROMPTLY. THE ONLY GOOD PART OF THE TRANSACTION."

Outstanding buy!!

"I am a native of Spain and so happy that Costco offers serrano ham at a really good price. This is my forth one from Costco.com and really pleased with it. Of course, it can't be compared to bellota/ iberico but for $14 a pound you cant go wrong. My boys and husband travel to Spain every year and they love it there and now have the opportunity to eat it here in the US. I spend some time to slice it with a slicer (really thinly) and vacuum seal it. Worth the effort as I enjoy this great ham for a long time. Make sure it is room temperature before you eat it. Enjoy!"

Very good Serrano

Pros: it's a quality product
Cons: should bring some kind of instruccions for serving
"It's a really good ham and to answer a few claims. When you get it boneless will need refrigeration and this kind of ham have to be very thinly sliced in order to be appreciated as thing as paper the better and for cooking you can use chopped chunks. Hope it helps!"

question about refrigeration

"I just received this ham. I bought it because I thought it was a good price and the reviews were mostly very positive. I have a question, however before I decide to keep
it, and that is does this require refrigeration? The package says yes, but I was of the understanding that you do not have to refrigerate serrano ham. Would appreciate all advice.

"A good Serrano comes from Badagoz where the chestnut aplenty. Again, an aged serrano from that part of Spain sells for more than twice what Costco is selling is for...to get to my review...there is a comment from another person and that person is excessively correct... you should never cut off the fat nor the skin until you are about to slice some to eat. Why!!!!!both are what give the texture and taste to the hamon...I was in Spain for 20 years with the military and continue to go twice a year...."
