It wasn't for me

Cons: my results didn't top normal cooking methods
"I took my unit back to a Costco Warehouse, after having purchased it online. I guess Sous Vide just isn't for me. That probably says more about me than it does about the system. The price is the best I've seen after a long time of researching sous vide options. After trying steak, chicken and eggs in the unit, I decided all the extra work (vacuum sealing, filling and heating the container, waiting for the process to complete and finally searing the steaks and the chicken) simply wasn't worth it. The results weren't any better than I'm able to do on my own.
I tell you what I was impressed with, though. Costco is the absolute best about returns. It was an on-line purchase and I was able to return it to a local warehouse with absolutely no hassle. Costco is to be commended for that"

Food Safety is key with this process

Pros: this process can do some great food
Cons: consider browning food or using kitchen boquet bef
"As a trainer in Food Safety it is critical to understand pasteurization time & temps.
Cook Chill has a section in the FDA Food Code and tells part of the story.
Wrap the bag of food around a temperature probe to get surface temp with out puncturing the bag

Needs better food rack

"I've read about the cooking procedure sometime ago in a magazine. Wanted to try it, but it was either buying a commercial version or building it myself. Nether method would have been inexpensive. When I received the email from Costco, I was intrigued again. I finally ordered and received yesterday. I just ate my first meal and taste wise, it was delicious. Now for a negative. I did read some criticisms about the rack that comes with the Demi model, it's close to worthless, causing a balancing act to keep the food separated and vertical. I find it hard to understand, that I should have to buy the other rack from the manufacture for $13.00 plus handling. There can't be more than a few cents difference in manufacturing costs between the better rack and the one that comes with it. I highly recommend the manufacture gets rid of the rack that comes with the Demi and replace it with the extra cost option. And if that isn't possible, Costco should make arrangements with SousVide to add the better rack and maybe increase price by a few dollars for Costco customers.
If the other rack had been included, I would give this 5 stars.
PS I'm now cooking baby back ribs for tonight."

The Souse Vide is great, the sealer stinks

"The main product, the Souse Vide works as expected. It keeps a VERY constant temperature. But, to keep the bags from floating, and to keep the bags from leaking, the sealing machine must be good. It STINKS. The vacuum does NOT draw out all the air so the bag floats. Better get a couple of rocks to hold the bag under the water. As bad as that, the seal is so wimpy that the bag leaks into the water bath. Probably, some of the water bath gets into the bag as well. Get a Foodsaver.
Skip the sealer and just buy the Souse Vide."

Great Product for the Home Chef

"I admittedly like my kitchen toys, and this is a wonderful addition. No, it is not fast, but meat, poultry and fish are superb cooked sous vide. Even the toughest beef comes out tender. It is not fast, so if you cook just to throw something on the table at night this may not be for you. However, if you really like to cook and create in the kitchen the sous vide allows you to go to a different level. The vacuum sealer is not great, but I didn't buy the unit for the vacuum sealer. My next experiment is to pasturize eggs in the unit so that there will be no opportunity for salmonella contamination when I use raw eggs, such as in caesar salad and steak tartar."

Great SousVide

"I have used the sousvide for about a year and works fine. I use it at least once a week and you can't beat it for steaks, chicken breasts and pork chops. I start with hot water so preheating is cut in half. The vacuum sealer no longer works properly. The vacuum is now weak and will not seal automatically because of this defect. It stills seals manually. I have a food saver vacuum that I'm using now. I wish they would carry the larger unit."

Wonderful way to cook gourmet at home!

"Heard about Sous-Vide cooking from a friend who worked at one of Thomas Keller's famous restuarants. This IS the way that the top chefs around the world cook to perfection. Read "Under Pressure" to know the science behind the cooking! This is the way to get a perfectly done medium-rare 2" thick steak edge to edge and taste amazing!
Yes, there is some minimal extra work to get the food vacuum sealed and then also "finished off" to give the meat color by searing on a pan or grill. But we have found that we purchase the individually packaged Kirkland chicken breasts, and Tri-tips at the Warehouse and then just drop them in and let the water "oven" do the work! The chicken is so tender and perfect, its hard to imagine how one can stand to eat such tough overdone meat!
My wife likes her meat medium-well, and the rest of us medium-rare, so we cook them all at our liking and then just leave hers on the grill a little longer... not hard at all!
We have done ribs, 72 hour short-ribs, hard boiled eggs (just drop them in and let them cook), custards, turkey, burgers, creme brulee, vegetables and a thanksgiving ham in the vacuum packaging!
We ended loving it so much that we invested in a semi-commercial vacuum sealer from their website since the included sealer is pretty wimpy (Foodsaver quality). It makes a world of difference!!!"

Real deal tool for real deal chefs

Pros: cooks food at constant rate and temp, easy to use temperature setting and timer
Cons: vacuum sealer does not do liquids., takes 20-30 minutes to reach set temperature.
"So first off, this isn't a set it and forget it tool for your home kitchen. This is a tool that sets the right temperature at a constant rate to cook food at it's ideal cooking temperature. So if you think that it will cook food on it's own without much hassle, you are sorely mistaken.
If you consider yourself a home chef, interested in trying different cooking techniques and applying different cooking methods as a tool to create a very good meal, then this fits the bill. I disagree with the previous review rating it at 1, as this is simply a cooking tool, to which you must use correctly, imparting flavors to infuse the food with. The machine doesn't cook the perfect meal, you do! This is the technology that helps you achieve that, so if you're looking for a quick tool to get it done, then watch the Food Network and their easy half hour meal deals, or use your one pot slow cooker.
About the system, the Demi Water Oven cooks perfectly. The book tells you the correct temperature and times for the different foods, however I'd recommend Thomas Keller's bible on Sous Vide, "Under Pressure: Cooking under sous vide" for proper handling of sous vide food and some great recipes.
Some caveats; the actual vacuum sealer, doesn't allow for liquids to be sealed with the meat. You would need to purchase a proper chamber vacuum for such an undertaking. However you could freeze the the liquids first then vacuum seal with the meat. I've tried this a couple times and it seems to work.
Again, this tool is not suited for your average home cook. This is a restaurant caliber tool that you can use at home. And with it, you will use it as a tool in your cooking arsenal to infuse and impart flavors. This tool will not make you a great cook. That's entirely up to you. It's up to you to make that happen."

Don't buy it

Pros: couldn't think of one

"My husband got it for me for Christmas. It was a great surprise, but the fun stopped there. We returned it for a refund. The method of cooking is a lot of work. Instead of throwing a steak on the grill you have to make the vacuum packet for it, then you have to cook it in the water bath, then because it looks so horrible, you need to fry it a bit to give it some color. We bought expensive steaks from Costco, that we know were good, and this process didn't do anything to make them better.
Also, you can't cook one med. rare and one med. They have to be the same.
Bottom line, too much effort for no seen benefit.

WONDERFUL FOR BUSY PEOPLE

"We purchased this, because my husband does all the cooking and he read about it. It is great for busy people, you can put the meat in before leaving for work and it is ready to "grill" when you get home. We did a prime rib at Christmas and it was great!! I highly recommend this cooker."

SousVide cooking is fantastic!

"I've had my SousVide demi for about 2 weeks now, and have used it to cook beef tenderloin twice, salmon once, cod once, pork tenderloin once, and chicken once. It's easy to use, and the meats/fish come out perfectly cooked inside. I always sear them afterward in my cast iron skillet with butter or oil to give them that finishing touch.
The cookbook that comes with the unit is very helpful in explaining how to cook sousvide, and the one recipe I've tried was great - it was a creamy onion mustard sauce for salmon, and it was absolutely delicious! Will definitely be making that recipe again. I was less thrilled with the chicken I made; the texture seemed a bit rubbery, so I will have to try that again soon and see if seasoning it differently might help. I'll use one of the book's recipes next time!
The unit itself is well-designed. I like the offset handles on the sides that make it easy to lift and pour the water out of the unit after cooking. My only complaint is the rack. It doesn't stand up easily on its side, and the slots only accommodate packages of food that are an inch thick or less.
I've read complaints about the vacuum sealer. So far I haven't experienced any issues. If there is ANY liquid in the bag whatsoever, it will suck it out, so be prepared for that. However, you can cancel the vacuum and then press seal to finish it up, if you see that too much liquid is being pulled out."

Fun and Delicious

"Like so many watchers of Food Network, my family and I have been curious about this interesting new cooking method. Took advantage of the Costco sale with the vacuum sealer thrown in. Have had it for about a week. Did a roast, steaks, in the shell eggs and pears. So, far, we are on a learning curve and recipes with good beginner information are kinda scarce, but we are liking it. The device is super easy to use. The demi is smaller than the plain supreme and might have been a better choice for us. Need to note that the rack that you see in the video does NOT come with this unit, but can be purchased on the website for the oven and is not expensive -- and is really necessary. I have not watched the DVD that comes with it yet. Also, not sure how much the replacement bags will cost. Hope Costco will stock them."

Splendid device!

"My wife has threatened to put me out on the street with my slew of largely-unused kitchen gadgets -- but even she agrees that this is a splendid addition. Yes, you have to learn some new tricks such as vacuuming pouches of food and calculating for (much) longer cooking times. But the actual cooking doesn't need to be tended and the results are certainly worth it: after a week of intensive testing we can confirm that it produces what it promises -- some of the best steaks and chicken we've ever had.
The nature of sous vide cooking pretty much guarantees repeatable and reliable results; your meat will alwanys be cooked to exactly how you like it.
The process is really an easy one and the learning curve gentle enough. It can make planning a large meal for company much easier (no more split second timing needed, the food is ready when you are) and for regular meals the cook-ahead and freeze pouches allow you to have good food on hand at demand.
I grudge every extra square inch of counterspace, but the sous vide has earned its square foot."

Very Nice Easy To Use

"I purchased this oven because I had weight loss surgery with a gastric band device. This device limits the amount, and sometimes the type of food you can eat. Conventionally cooked meat is not well tolerated by gastric bands and cause extreme pain and discomfort due to the dryness of the meat. The moist and tender product produced by the Sous Vide Supreme allows me to eat all types of meat/fish without issue. I researched this model heavily as compared to industrial immersion circulators. So far I am extremely pleased with the ease of use, the end result product. I am definately not a chef, nor am I even a cook, I can prepare food and that's about it but the food that comes out of the Sous Vide Supreme is so full of flavor it's amazing. I don't think I ever actually knew what chicken was supposed to taste like until I tasted Sous Vide prepared chicken. It's not for those in a hurry but the food is worth the wait. If the device holds up over time it will be well worth the money."

Aside from the vacuum sealer...

"The oven is wonderful. Have used it half a dozen times now and been more than pleased each time. Some of the best meat I've ever eaten has come out of this thing. But I've had the opposite experience with the vacuum sealer. It doesn't suck out all the air (seems to be good enough for sous vide, but not for vacuum storage/freezing), and getting it to seal can be quite a challenge. I had to take off a star for that. Costco should look at replacing this kit with one that does not include the vacuum sealer unless/until this company gets their act together and provides a decent one."

Does exactly what I want it to.

"I cook a lot and I have had my eye on the Sous Vide Demi for a while before I bought it. I must say that I am thrilled with the result. So far I have made Steak, pork chops, chicken and lamb. Although the lamb was a disaster everything I have cooked has been delicious.
Given that I prepare everything in advance and just throw it in before work has worked out great cutting my cooking endeavors when I get home down at least 70%.
As other reviewers have said the vacuum sealer does not do liquids well so just freeze your marinade or sauce in an ice cube tray and it will work brilliantly."
